The chef Miguel Ángel Expósito and sustainable gastronomy
Miguel Ángel Expósito combines experience, passion, and culinary curiosity in a new approach to Manchego gastronomy, where local products are as important as the care taken in revising traditional Manchego recipes in the kitchen, bringing enthusiasm and modernity both in the preparation and presentation of his dishes.
Born in Seville and adopted by La Mancha, our chef trained in the kitchens of Mugaritz, Martín Berasategui, and Can Jubany. He worked with Javier Aranda at La Cabra and Gaytán before becoming the Head Chef of La Caminera in 2019. As a member of Eurotoques, he has represented local gastronomy at events such as Raíz Culinaria and Sabores del Quijote.
